By popular request, here is the recipe for Emily's PB Squares. It's mean to make me post this considering the diet I'm on; I'm just sayin'.
Emily's Peanut Butter Squares
Peanut Butter/ Butterscotch Candy
1 cup of peanut butter
1 cup of butter
Half a bag of butterscotch chipits
Quarter cup of dried cranberries
Quarter cup of sunflower seeds (no shells)
Quarter cup of finely chopped almonds
The amounts of cranberries, chopped almonds and sunflower seeds may be increased depending on how thick you like your fudge.
Melt peanut butter , butterscotch chipits and butter in a medium sized saucepan over medium heat. Add all of the other ingredients and mix well together. Increase heat under the saucepan and stir mixture occasionally to prevent sticking to the pan. When the mixture starts to boil reduce heat . Allow to simmer for a minute. Pour mixture into a 8”X8” pan that has been buttered to prevent sticking. Put the pan into snow for one hour and then put into the fridge overnight.
Substitute cranberries , sunflower seeds or finely chopped almonds with chopped dates, oatmeal , rice crispies, chopped peanuts, Mini marshmallows etc.
Substitute butterscotch chipits with chocolate chipits.
Add a capful of Bailey’s liqueur for more interesting flavour!! Hic!
